Nutrition Expert: Toby Smithson, RD, LDN, CDE

The next stop on Dietitians Online journey brings us to
the greater Chicago Area, where Toby Smithson, RD, LDN, CDE
is making a difference everyday in the lives of people with diabetes.


Toby Smithson is a Registered Dietitian, a national media spokesperson for the American Dietetic Association, Past President of the Illinois Dietetic Association, a Certified Diabetes Educator, and holds a certification in adult weight management. She earned her B.S. Degree in Dietetics, Nutrition and Food Science through the Coordinated Undergraduate Program at Northern Illinois University, and has worked professionally in institutional, clinical and public health settings.

Toby founded DiabetesEveryDay to provide guidance and continuous support every day to people with diabetes. Toby was diagnosed with Type 1 diabetes in October, 1968, and has successfully managed her diabetes personally every single day. Toby shares her own personal insights into successful diabetes self-management, as well as her knowledge and experience as a registered dietitian.

A dietitian . . . .
  • Is a person with qualifications in nutrition and dietetics, recognized by national authority(s). The dietitian applies the science of nutrition to the feeding and education of individuals or groups in health and disease.
  • Receives a minimum of a Bachelor's degree with course work approved by the national dietetic authority.  Courses include food and nutrition sciences, foodservice systems management, business, economics, computer science, sociology, biochemistry, physiology, microbiology and chemistry.
  • Completes a supervised professional practice of at least 500 hours.
  • Passes a national examination prepared by the countries dietetic and nutrition authority.
  • Completes continuing education in order to maintain one's credentials.

Nutrition Experts - Making a Difference
Highlights from the 76th FDA Annual Symposium


The presentation for the 2011 Florida Dietetic Association Member reception highlights Nutrition Experts - "Making a Difference."

The background song is called "Together We Can Change the World (TWCCTW)." TWCCTW played a major role in bringing over an African Youth Choir called SIFA. The goal was to raise money for the children to take back to Uganda in order to finish building their orphanage and to build new homes for them to live in. See the footnote for the complete story behind the song.1

Together We Can Change the World, Inc (TWCCTW) played a major role in bringing over an African Youth Choir called SIFA. All of the children are AIDS orphans. The goal was to raise money for the children to take back to Uganda in order to finish building their orphanage and to build new homes for them to live in.


This song speaks right to the heart of TWCCTW message to people everywhere. TWCCTW hopes "you choose to use this song as your own song of a personal commitment to make a difference in the world."

76th Florida Dietetic Association Annual Symposium
“Nutrition Experts - Making a Difference”
July 17 - 20, 2011

Over 600 Nutrition Experts from Florida and the National and International Scientific Communities will gather in South Florida at the Florida Dietetic Association 76th annual symposium. The event will be held at the Hyatt Regency Bonaventure Conference Center and Spa, July 17th to 20th.

This year there are over 30 educational sessions, including the "Great Vitamin D Debate", feeding kids, the current dietary guidelines, MyPlate, wound healing, and the latest on food and nutrition trends.

The theme, "Nutrition Experts - Making a Difference" showcases the expanding role of the dietitian in the community, medical field, education, media, business and government.

This refreshing Independence Day salad is made from strawberries, blueberries, cottage cheese, and Neufchatel (to make the stars using a pastry tip). Prepare in a rectangular serving pan or plate. To turn the salad into a healthy dessert, substitute low fat vanilla ice cream for the cottage cheese.
