National Pasta Day



Pasta is a type of noodle and commonly referred to as a variety of pasta dishes. It is a staple food of traditional Italian cuisine. Usually, pasta is made from an unleavened dough of durum wheat flour mixed with water and formed into sheets or various shapes, then cooked and served in any number of dishes. It can be made with flour from other cereals or grains, and eggs may be used instead of water. Kinds of pasta are divided into two broad categories, dried (pasta secca) and fresh (pasta fresca). 

Both dried and fresh pasta come in a number of shapes and varieties. Common forms of pasta include long shapes, short shapes, tubes, flat shapes, and sheets, filled or stuffed, and decorative shapes.

Recipe: Whole Wheat Spaghetti with Diced Tomatoes
Serves One

Ingredients
2 oz Whole Wheat Spaghetti (1 cup cooked)
2 tsp Olive Oil
1 Garlic Clove
1 large Tomato, diced (3/4 cup)
1/2 tsp Oregano, dried
1 Tbsp Parmesan Cheese

Directions
1. Prepare spaghetti as per the manufacturer’s directions.
2. Heat olive oil in a skillet over medium heat. Add garlic and cook for about 3 to 4 minutes.
3. Add tomatoes and oregano; simmer, uncovered, 10 to 15 minutes.
4. Add spaghetti to skillet; toss to coat with tomatoes.
5. Sprinkle with Parmesan cheese before serving.

Our Mango Harvest: Mango Chicken Pasta Salad

The Mango Chicken Pasta Salad is easy to prepare and perfect for a hot summer day. Make sure you refrigerate before serving.



Ingredients.
1/2 cup pasta, cooked
1/2 cup mango, diced
3 oz chicken, diced
1/4 cup tomato, diced
2 Tbsp onions, diced
2 Tbsp fat-free vinaigrette
1 cup mixed greens

Directions.
1. Plate the greens on the bottom of the plate.
2. Mix all ingredients together (except the greens).
2. Refrigerate until ready to serve.

From Our Garden:
Pasta, Mango and Green Bell Pepper with Ginger Thyme Dressing

Recipe: Pasta, Mango and Green Bell Pepper  
with a Ginger Dressing 

The last mango of the season. The tree produced 82 mangoes this year. We met our neighbors who came by to pick fruit from the tree. We made 6 Banana Mango Breads and 60 Muffins. Family and friends enjoyed these sweet and juicy mangoes. 


With this last mango, I wanted to make something different. There were two bell peppers ready for picking. What would blend well with this combination?

        •     Pasta - hot or cold
        •     Thyme from the garden
        •     Ginger dressing






From Our Garden:
Pasta, Mango and Green Bell Pepper with
Ginger Thyme Dressing
Serves 3

Ingredients
3 cup Pasta, cooked
3/4 cup Mango, diced
1/2 cup Green Bell Pepper, sliced

Ginger-Thyme Dressing (Serving size: 2 Tablespoon)
1/4 cup rice vinegar
2 tsp sesame oil
1 tablespoon soy sauce, low sodium
1.5 tablespoon grated ginger root
1 teaspoon brown sugar
3/4 teaspoon finely chopped fresh thyme
1/4 teaspoon finely chopped garlic
1/8 tsp white pepper

Directions
  1. Prepare pasta, mango, and peppers. Place in a bowl. Cover and refrigerate.
  2. Dressing. Whisk together all ingredients in a small bowl. Drizzle over pasta. 
  3. Serve Hot or Cold.
