National Root Beer Float Day

A root beer float, also known as a "black cow" is traditionally made with vanilla ice cream and root beer.


From the traditional root beer float to an ice cream treat made with vanilla ice cream and frozen root beer soda, National Root Beer Float Day was a big hit in our home.

We chose a diet root beer soda to avoid excess sugar and limit the calories. The amount of diet root beer is not limited because it has "zero" calories.

Beverage. Make sure you carefully combine the soda and ice cream. The reaction causes bubbles to form and a rapid rise in foam, which is part of the fun and can get messy.  Use 1/4 cup light vanilla ice cream. Add a straw and a spoon and enjoy.

Ices.  Add 1/4 cup light vanilla ice cream to a 4-ounce cup. Slowly pour diet root beer soda on top. Add an ice pop stick (optional). Leave in the freezer overnight.  Serve as an ice pop or with a spoon.

Ice Cubes. 
Freeze root beer soda in an ice cube tray. Leave in the freezer overnight. Add ice cubes to water, milk, or explore the possibilities.

Variety of Fresh Fruits. 1 Tablespoon of each: Orange, Strawberries, Blueberries, Kiwi, Raspberries, & Mango

Peach Melba Light

Peach Melba is a dessert of peaches and raspberry sauce with vanilla ice cream. The dish was invented in the 1890s by the French chef Auguste Escoffier at the Savoy Hotel, London, to honor the Australian soprano Nellie Melba.


Recipe.: Peach Melba
  • Makes: 2 servings
  • Serving Size: 1/2 cup peach slices or 2 peach halves,
    1 Tbsp jam topping, 1/2 cup reduced-fat ice cream

Ingredients


2tsp.fresh lemon juice
1/4tsp.pure vanilla extract
1cuppeach slices or
 4 halves, canned, in juice 
2Tbspraspberry jam
1cupreduced-fat Vanilla Ice Cream 

Directions

  1. In a small saucepan, add the lemon juice, vanilla, and canned peaches with juice. Reduce the heat to low and simmer for about 5 minutes.
  2.  Remove the saucepan from the heat, and allow the peach halves to cool for 30 minutes.
  3. Using a slotted spoon, place the peach halves in dessert dishes. Cut into slices, if desired. 
  4. Heat the jam in a microwave-safe container for 15 seconds until melted.
  5. Top the peach slices with scoops of ice cream, and drizzle with the jam. Garnish with fresh raspberries.

In 1892, Nellie Melba was performing in Wagner's opera Lohengrin at Covent Garden. The Duke of Orléans gave a dinner party to celebrate her triumph. For the occasion, Escoffier created a new dessert, and to display it, he used an ice sculpture of a swan, which is featured in the opera. The swan carried peaches which rested on a bed of vanilla ice cream and which were topped with spun sugar. 

In 1900, Escoffier created a new version of the dessert. For the occasion of the opening of the Carlton Hotel, where he was head chef, Escoffier omitted the ice swan and topped the peaches with raspberry purée. Other versions of this dessert use pears, apricots, or strawberries instead of peaches and/or use raspberry sauce or melted red currant jelly instead of raspberry purée.

From the table below you can see ice cream has a variety of calories and amounts of fat. I have never been a fan of no sugar-added ice cream. National Blueberries Month
The North American Blueberry Council (NABC) is a non-profit agricultural association representing cultivated blueberry growers and marketers in the United State and Canada. The NABC as established in 1965 and its members currently represent approximately 70% of the North American cultivated blueberry crop




National Ice Cream Month
In 1984, President Ronald Reagan designated July as National Ice Cream Month and the third Sunday of the month as National Ice Cream Day. 
The International Ice Cream Association (IICA) encourages retailers and consumers to celebrate July as National Ice Cream Month. In 2011, National Ice Cream Day will be Sunday, July 17th.



NRPA encourages recreation facilities and parks across the country to kick-off summer programs, promote outdoor physical recreation, and pull together volunteers to make their outdoor space a thriving center of community activity.

This year’s theme is “Rock Your Park.” NRPA is encouraging members, agencies, and citizens to plan events and initiatives that remind local decision makers and the community of the exciting and vital role parks and recreation play in the lives of Americans.



National Grilling Month
Grilling is applying food directly to the heat and flame of a grill. The United States Department of Agriculture (USDA) has prepared a fact sheet on Grilling and Food Safety. Armed with the fact sheet, you can enjoy many delicious, healthy and safe meals.




July 17th - 20th, 2011 Florida Dietetic Association Annual Symposium: Nutrition Experts “Making a Difference”

The Florida Dietetic Association Board, Executive Director and headquarters staff are proud to extend an invitation to attend the 76th annual symposium at the Hyatt Regency
Bonaventure. 

The FDA annual symposium is always planned with an eye for emerging trends, understanding controversies, and offering a wide-spectrum of educational opportunities.
